Well hello everyone! I have taken quite the hiatus from blogging this summer but I’m back in action and excited to write again.
I’ve had a lot of exciting things going on. I’ve continued to ramp up my business and have new online personal training and boot camp clients from all over the country, and I’ve even branched out to a couple of different countries! I absolutely love being able to motivate women and help them reach their goals and live a healthier and happier life.
I also started freelance writing for Health Ambition, an online magazine, a few weeks ago and I’m very excited for the opportunity!
So, I’m going to blame juggling being a mom, wife and all of my clients on my blog slacking…oh and the fact that Philip (my 2.5 year old) who now refuses to nap and that’s when I got all of my writing done :/).
I want to share my easy shrimp stir fry recipe with you. It’s one of my favorite quick and easy weeknight dishes, that is packed with protein and low in fat, and tastes great of course! I make this dish with quinoa for the added protein. You can substitute brown rice if you don’t have quinoa at home. Quinoa is one of the most protein-rich foods we can eat because it’s a complete protein. It contains almost twice as much fiber as most other grains, and it also has iron, lysine and magnesium. Try it if you haven’t yet!
Here’s what you’ll need:
- 1 cup quinoa
- 2 tbs extra virgin olive oil
- 1 pound of large shrimp (21-25)
- 1 red pepper, cut in 1 inch pieces
- 1 green pepper, cut in 1 inch pieces
- 1 small yellow onion, cut in 1 inch pieces
- 2 tbs low sodium soy sauce
- Fresh ground pepper to taste
Prepare your quinoa according to package instructions and while it’s cooking start your easy shrimp stir fry.
Heat the olive oil in a large frying pan over medium high heat and add shrimp, turning them over after a couple of minutes. After about 6 minutes or until done (opaque color is gone and pink), remove shrimp with a slotted spoon and set aside (keep warm with foil).
Next add the red pepper, green pepper, and onion to the pan and sautee over medium heat for about 10 minutes or until veggies soften up a bit. Stir the shrimp back in, add in the soy sauce and black pepper to taste and warm up for a minute or two, stirring everything together.
Remove from heat and serve over quinoa immediately.
